Arakas, Peas with carrots and potatoes in a tomato sauce

This is another classic Greek “home dish”, which is really quick and easy to prepare. It falls under the category of “Ladera” (dishes with emphasis on the olive oil) , it is vegetarian and it is a “quick” solution when there is no time to cook.

Ingredients

  • 500 grams of peas (frozen or fresh)
  • 300 grams of potatoes (cubed)
  • 140 grams of carrots (diced)
  • 120 grams white onions (finely chopped)
  • 1 celery stick (finely chopped)
  • 2 cloves garlic (crushed)
  • 2 tablespoons extra virgin olive oil for frying
  • 50 ml extra virgin olive oil for cooking
  • 2 teaspoons tomato puree
  • 400 grams chopped tomatoes
  • 500 ml water or vegetable stock
  • 20 grams fresh dill
  • 2 teaspoons dried oregano
  • salt and pepper

Method

  1. Start by adding the 2 tablespoons of olive oil in a pan and saute your onions, followed by the celery.
  2. Then add in the carrots, the potatoes and the garlic and fry them all together until they get a bit of color.
  3. Then add the tomato puree, the water and the chopped tomatoes. Season well with salt and pepper and let it simmer for about 45 minutes until the potatoes are just about done.
  4. Then add in the peas which shouldn’t cook for more than 5-10 minutes, followed by the oregano, the dill and the olive oil.
  5. This dish is enjoyed best with some freshly baked bread and a slice of feta cheese, sprinkled with olive oil and oregano.
