Chicken Stock


Today I want to talk about a basic recipe, which can be used in endless recipes and will bring your final dish on a different level. I will show you how to make beautiful chicken stock.


  • 1 whole organic Chicken carcass (breast and legs removed)
  • 1 large onion
  • 2 medium sized carrots
  • 1-2 celery sticks
  • 2 garlic cloves
  • 1 leek
  • 3-4 spring onions
  • 3-4 fresh thyme branches with their leafs
  • 1 small red pepper
  • 8-10 whole peppercorns
  • 4-6 Whole allspice
  • 3-4 bay leafs


  1. Place all your ingredients in a large pan and cover them with water. 
  2. Once it starts boiling, remove the froth and reduce your fire. 
  3. Allow it to gently simmer for 2-3 hours until most vegetables start falling apart
  4. Your water will reduce to nearly half. 
  5. Take a masher and press down in your pot to extract all the flavour
  6. Then pass it through a thin colander, while pressing with the masher to get every single drop. 
  7. Your stock will have a light golden colour.

You may use it to cook any recipe that requires chicken stock. Once it is completely cooled down, you can put it in smaller containers and freeze for future use.

I will design a menu based on your preferences and occasion. All the ingredients will be sourced by me and will be fresh and organic where possible.

On the day of the event, i will arrive at your home and will do all the appropriate preparations for the meal. Depending on the menu i might need to be there a few hours earlier.

During the meal i will serve the dishes or prepare the buffet. Once the meal is complete, i will clear the dishes, clean the kitchen and then leave. Discreetly.
