Homemade Pizza

VIDEO - Everybody loves pizza. It is probably one of the most versatile dishes as there are thousands of variations and of course numerous of recipes for the dough. I will not try and convince you that my recipe is the traditional or the original as many do, but I promise you it will be really delicious and it will make you think twice before you order another pizza.

This recipe should make 4 pizzas.

Ingredients 

For the dough

  • 700-750 grams strong flour 
  • 350 grams water
  • 1 teaspoon of dried yeast 
  • 1 teaspoon of sugar
  • 1 teaspoon of salt 
  • 1 tablespoon of extra virgin olive 

For the sauce

  • 150 grams chopped tomatoes 
  • 50 grams Pasata
  • 2 cloves of garlic (or one if you are not that keen on garlic)
  • salt
  • pepper
  • 1 teaspoon sugar
  • 5-6 large basil leafs

For the topping (you can choose your preferred toppings) 

  • Cheese of your choice  (I used grated mozzarella and fresh buffalo mozzarella)
  • mushrooms 
  • red pepper
  • dried oregano

Method 

Now for the dough I would recommend you to start it the day before. 

  1. Start by mixing with a fork the water with 300 grams of flour, the sugar and the yeast, 
  2. cover with a clean towel and allow it to rest in a warm place for at least 30 minutes until you see the bubbles like below.
  3. Then add the rest of the ingredients topping up the flour progressively. 
  4. Start to work it with your hands and once it unifies put it on your worktop with a bit more flour
  5. Now the secret for a good dough is to work it enough to become nice and silky, but not too much as it will harden it. 
  6. Just try and pull the dough as you are stretching it. 
  7. Separate your dough to 4 equal pieces and form 4 balls. 
  8. At this stage you can individually wrap them with cling film and freeze 2 of them. If you are making this the day before, refrigerate the other two after you wrap them with cling film. 
  9. When you are ready, pop the balls onto a tray putting some flour below and on top of the dough, cover with a clean dump towel and allow the dough to rise and double in size, around 2 hours.
  10. I have made pizza many many times and I still use a rolling pin, so don’t feel bad if you can’t stretch the dough by hand and toss it in the air. Before you roll them, you can add a bit of fine Semolina instead of flour to create a crispy base. Roll them quite thinly as shown below.
  11. For the sauce, add all the ingredients in a blender and mix well.
  12. Now cover your base with the sauce and top up with the grated mozzarella
  13. Then add the rest of your toppings and finish it with the fresh buffalo mozzarella which you have teared with your fingers.
  14. Put the pizza in a preheated oven at 220 Celsius for about 8 to 10 minutes. 
  15. As soon as it comes out sprinkle some dried oregano and add some basil leafs.
