Mexican Tacos

A typical Mexican dish. There are countless of varieties and options in regards to the filling. It is definitely a sharing dish ideal for parties. This is my interpretation.

Ingredients 

For the mince beef

  • 500 grams beef mince
  • 1 medium onion finely chopped
  • 1 celery stick finely chopped
  • 2 cloves garlic crushed
  • 200 grams cooked and rinsed red beans
  • 100 grams chopped tomatoes
  • salt and pepper
  • 2 tablespoons extra virgin olive oil
  • 1 small glass of water

For the salsa 

  • 3 tomatoes
  • 4 mini bell peppers
  • 1 small red onion
  • 1 small chili
  • Zest of one lemon or lime
  • Juice of a lemon or a lime
  • 40 ml extra virgin olive oil
  • Bunch of coriander
  • Salt

For the construction

  • Guacamole (click for recipe)
  • a small shredded lettuce
  • 12 taco shells
  • Grated cheddar cheese

Method

For the beef mince

  1. Start with finely chopping your onion and frying it in a hot pan with the olive oil,
  2. followed by the celery. 
  3. Once the onion and celery softens, add in the mince in smaller batches and fry until it changes colour (brown). 
  4. Then add the garlic, tomatoes and a small glass of water 
  5. cook until the liquid has completely evaporated 
  6. Finish it off with salt and pepper and add in the red beans.

For the salsa

  1. For the tomato, slice it in 6 wedges, remove the seeds (you can put them in your mince) and slice the skin in long strips. 
  2. Slice in a similar fashion the peppers. 
  3. Use a peeler and very carefully peel your lemon or lime to only remove the zest (no white bits). Then slice it also in long strips. 
  4. Finely chop your onion, the chili and the coriander and put them all in a narrow tall container 
  5. Add the olive oil, the lemon or lime juice and the salt and mix well. 
  6. Ideally this mixture should stay overnight in the fridge.

Constructing the Tacos

  1. Heat your tacos as per the instructions on the box. 
  2. Add some lettuce on the base, 
  3. followed by the cheddar cheese,
  4. the mince,
  5. the Guacamole sauce 
  6. finally the salsa.

There is no polite way to eat a taco, just go for it and scoop up anything that drops with some nachos.

On the day of the event, i will arrive at your home and will do all the appropriate preparations for the meal. Depending on the menu i might need to be there a few hours earlier.
