Today I will show you how to make Giouvarlakia, which is a Greek recipe. It consists of meatballs with rice and the soup is finished with an avgolemono (egg and lemon) sauce. It is definitely considered a comfort dish.

 

Ingredients

  • 1 kg beef mince (or half beef, half pork)
  • 180 grams white or red onion
  • 2 celery sticks
  • 40 grams of parsley and mint (30 to 10 ratio)
  • 90 ml extra virgin olive oil
  • 200 grams of Basmati rice
  • 2 cloves garlic
  • Salt and pepper
  • Paprika
  • 2-2.5 litters water or stock
  • 100 grams carrots
  • 2 eggs
  • Juice of 2 lemons
  • 2 table spoons extra virgin olive oil

Method

  1. Begin by preparing the mince. Use a food processor to finely chop your onions, celery, garlic and herbs (don’t overdo it though) 
  2. Add in a large bowl the mince, the chopped onions, celery, herbs and garlic
  3. Drizzle the 90ml olive oil, salt, pepper and finish with the rice
  4. Mix it really well using your hands
  5. At this stage you can leave it for 30 minutes in the fridge
  6. Then form little meat balls about the size of a walnut and place them at the bottom of a large heavy pot
  7. Once complete add the water or stock slowly and bring it to a boil
  8. As soon as it boils turn the heat to a medium simmer and allow it to cook for 1 to 1 1/2 hours until the meat balls are done
  9. You might need to top up a bit of water, after all it is a soup.
  10. Once the soup is ready, remove from the heat
  11. Mix your eggs in a large bowl and slowly incorporate the juice of 2 lemons, followed by the olive oil
  12. The next bit is really crucial as it has to be done correctly. Add really slowly (drop by drop) of the hot soup into your egg and lemon mix. You need to slowly increase the temperature of your eggs
  13. You can progressively increase the speed you pour in the hot soup. You need to use about 10 full ladles and then once the temperature of the eggs is hot, pour the mixture into your pot
  14. Stir it gently and it is ready.

This soup is great if you serve it with some good bread and feta cheese. ENJOY
