Spaghetti Meatballs


This is a classic Italian dish, that everybody looks forward to. This is my interpretation. 

When it comes to cooking you should try and make it as enjoyable as possible. This is a dish that just shouts to me Dean Martin. I have put a selection at the bottom of the recipe, please play it as you cook and imagine you are in a trattoria in Italy..... 


For the meatballs

  • 500 grams beef mince (you can also use half pork and half beef)
  • 100 grams onions
  • 20 grams parsley and mint
  • 20 grams celery
  • 10 grams sea salt
  • 30 ml extra virgin olive oil
  • 1 egg
  • 1 tablespoon oregano
  • pepper
  • 30-40 grams breadcrumbs
  • Some plain flour
  • Oil for frying the meatballs (I used half olive oil and half vegetable oil)
For the sauce
  • 300 grams chopped tomatoes
  • 100 grams pasata
  • 140 grams onion
  • 1 celery stick
  • 2 cloves garlic
  • 60 grams carrots
  • 1 small glass red wine
  • 750 grams spaghetti 
  • Parmesan cheese
We need to start with the meatballs
  1. Place you mince in a large ball
  2. add all the ingredients except the breadcrumbs
  3. Mix it well and progressively add the breadcrumbs
  4. The texture has to remain moist, but not falling apart
  5. Cover the ball with cling film and place it in the fridge for at least 30 minutes
  6. Form the meatballs, about the size of a walnut
  7. Pour some flour in a plate and roll your meatballs in the flour to cover them
  8. Then place them in a pan with hot oil, enough to cover about 1/3 of the meatballs
  9. Cook them in 2-3 batches to maintain the high heat until they get a nice colour all around
  10. Place them on a plate with kitchen roll underneath
  11. For the sauce, fry you finely chopped onion
  12. followed by the celery, the carrot and the garlic
  13. Once they soften up, add the wine 
  14. when the alcohol evaporates, add the pasata and the chopped tomatoes and cook for about 10 minutes
  15. Boil you pasta as per the instructions on the packet  
  16. once ready, as you drain them save a cup of the water and add it in the sauce
  17. Put the meat balls in the sauce and cook together with the sauce for about another 5 minutes
  18. Finally add the spaghetti in your sauce and mix well, but try not to crumble your meatballs
  19. Serve on a plate and add a generous amount of parmesan

On the day of the event, i will arrive at your home and will do all the appropriate preparations for the meal. Depending on the menu i might need to be there a few hours earlier.

During the meal i will serve the dishes or prepare the buffet. Once the meal is complete, i will clear the dishes, clean the kitchen and then leave. Discreetly.
