Theo's Stir-fry

Theo's stir fry with vegetables and King Prawns - VIDEO*

This is a suprisingly quick dish to prepare with endless variations. This can be prepared with any leftovers you have in the fridge. This is how I make it

Ingredients

  • 1 knob of ginger (mashed)
  • 3 cloves garlic (mashed)
  • 1 chili (finely chopped)
  • 1 carrot (sliced in thin strips)
  • 1 pepper (sliced in thin strips)
  • 100 grams sugar snap peas
  • 1 smal British chicory (finely chopped)
  • 1 bok choi cabbage (finely chopped)
  • 200 grams mixed mushrooms (roughly chopped)
  • 3 spring onions (1 cm thick slices)
  • 200 grams raw tiger prawns
  • 400 ml coconut milk
  • 150 grams Edamame beans
  • 150 grams bean sprouts
  • 2-3 tablesppoons vegetable oil
  • 2-3 tablespoons Teriyaki sauce
  • 2-3 tablespoons soy sauce
  • 3 nests with noodles of your choice
  • Salt and pepper
  • Juice of 1 lime
Method
When you stir fry it is really important to maintain high heat of your pan at all times. So fry your vegetables in batches.
  1. Start by frying in a hot pan with a bit of oil mashed garlic, mashed ginger and the chili 
  2. Add the carrots and the peppers and season with salt and pepper, once the vegetables have soften slighly, put them in a bowl
  3. Add some more oil and stir fry the sugar snap peas, the British Chicory and the bok choi cabbage. Season with salt and pepper. Once softened add them in the bowl with the rest of the cooked vegetables
  4. Add a bit more oil in your pan and fry the mushrooms. Season with salt and pepper and put them in the bowl.
  5. Then continue with the king prawns, add a bit of oil fry them about a minute per side. 
  6. Put all the vegetables from the bowl back in the pan and add the coconut milk
  7. followed by the edamame beans, the teriyaki sauce and the soy sauce. Allow it to cook for about 5 minutes
  8. At the same time boil some water in another pan and blanch your bean sprouts. Then add them in your stir fry.
  9. In the same water boil your noodles, rinse them well and add them in the stir fry.
  10. Now incorporate everything together and finish with the lime
