Club sandwich with chicken, bacon and cheese, served with crispy baked baby potatoes and sauce - VIDEO*

Club sandwich for those who don't know is an upgraded sandwich, as it contains 3 slices of bread, with double the filling. Of course there is no one way to make this. This is how I make it

Ingredients

  • 2 chicken breasts
  • 500 grams baby potatoes
  • thyme
  • 6 cloves garlic
  • salt and pepper
  • 6 tablespoons extra virgin olive oil
  • 20 grams butter
  • 4 slices bacon of your choice
  • 2 slices of cheese
  • 6 slices bread
  • mayo for the bread
  • 2 Lettuce leafs
  • 1 tomato sliced
For the sauce
  • 2 tablespoons mayonnaise
  • 2 tablespoons mustard
  • 1 tablespoon ketchup
Method
  1. Use a skewer through your potato and cut your potatoes in a spiral way
  2. Boil the potatoes for 10 minutes and place them in a baking tray
  3. Add 4 tablespoons olive oil, 3 whole cloves garlic, thyme, salt and pepper
  4. Put the tray in the oven 200 Celsius for about 20 minutes until they turn crispy golden
  5. Season your chicken with salt and pepper
  6. In a frying pan, add a couple of tablespoons olive oil and saute your chicken breasts on both sides. Just enough to seal it. Towards the end add the butter
  7. In a small tin tray place a few branches of thyme and 3 cloves of garlic, Place the chicken on top together with the juices of the pan. 
  8. Cover with foil and bake in the oven at 180 Celsius for 12-15 minutes
  9. Once cooked remove from the tray and slice in thin slices (about 1 cm)
  10. Fry your bacon to your liking
  11. For the sauce, mix the mayo, the mustard and the ketchup together
  12. Toast your bread and spread some mayo 
  13. Place the lettuce, the tomato and the bacon
  14. Put another slice of bread on top and then continue with the cheese
  15. Cover it with the 3rd slice and use a serrated knife to slice it diagonaly to 4 pieces. You can use toothpicks to hold the sandwich together
  16. Spread them to the 4 corners of your plate and in the middle put some of the potatoes and the sauce
