Koulouri Thessalonikis


VIDEO - Traditional Greek sesame bagel. It is a typical breakfast snack for Greeks. It is great on its own, but also commonly consumed with cream cheese.


  • 15 grams fresh yeast
  • 500 ml warm water
  • 1 kg strong flour
  • 70 gr sugar
  • 50 ml vegetable oil
  • 2 teaspoons salt
  • 400 grams sesame seeds
  • 2 tablespoons honey


  1. Split your yeast in half and mix it with 100 ml warm water and 2-3 tablespoons from the flour. Let it rest ideally overnight
  2. When you are ready to begin, repeat step one in a different container, but let it rest for about 20 minutes only
  3. Sieve about ¾ of your remaining flour and place it in a large bowl with the salt. Add the sugar, the oil, the 2 yeast mixtures and the remaining water. 
  4. Either use a kneading mixer or elbow grease to knead your dough adding a bit of flour until you get a soft unified dough
  5. Cover with a clean tea towel and allow it to rest in a warm place until it doubles in size
  6. Knead the dough for a further 5-10 minutes
  7. Take some dough about the size of a walnut and form a long string about 1 cm thick
  8. Repeat the process until you have about a dozen
  9. Prepare a mixture of room temperature water and honey to dip your dough
  10. Close the edges to form a circle and dip it in the water/honey mixture for 2-3 seconds
  11. Pull it gently with your fingers to stretch and put it in your sesame seeds until fully covered
  12. Place it on a large tray with baking paper and repeat with the rest of the dough strings
  13. Put it in a preheated oven at 220 Celsius for 10-15 minutes flipping them over about half way through
  14. Pop them on a rack and allow them to completely cool down

I will design a menu based on your preferences and occasion. All the ingredients will be sourced by me and will be fresh and organic where possible.

On the day of the event, i will arrive at your home and will do all the appropriate preparations for the meal. Depending on the menu i might need to be there a few hours earlier.

During the meal i will serve the dishes or prepare the buffet. Once the meal is complete, i will clear the dishes, clean the kitchen and then leave. Discreetly.
