Baked chicken strips


This is a relatively simple dish to prepare. It is definitely much better than the frozen chicken nuggets you can buy in the supermarket and for sure a lot healthier. Try and make this with your kids as I am sure they will really enjoy it. Getting your kids involved with the cooking, is going to help them better understand the importance of the ingredients, the process and will help them try more things. My daughter Elena is still too young to help me in the kitchen (4 months old).

Below you will find step by step instructions with pictures, but first our ingredients. This should be enough for a small family.


Chicken strips

  • 600 gr Chicken fillet (free range and organic if possible)
  • Salt, pepper and smoked paprika to taste
  • Flour, bread crumbs and about 3 eggs for the coating

Creamy potato mash

  • 1.5 kg potatoes
  • Salt, white pepper and nutmeg to taste
  • 50 gr unsalted butter
  • 50 ml milk
  • 1 egg


  1. We first peel out potatoes and cut them into cubes while we boil enough water to cover the potatoes. Boil them until soft and then strain them.
  2. While the potatoes are still hot, put them back in the pot, add the butter, the salt and mash the potatoes using a hand blender, or a masher.
  3. Then add the milk, the white pepper and the nutmeg and continue mashing until you get a creamy consistency
  4. Moving on to the chicken strips which you can prepare while you wait for the potatoes to boil.
  5. It is really important that you use good quality chicken, ideally organic, as it tastes far better and the chicken had a chance to have a decent life. Cut the chicken onto strips about 2 x 5 cm keeping the thickness to about 1 cm. don’t use a ruler for this, as long as they are all similar size it will be fine. Place them in a bowl and season to your liking. I added sea salt flakes, black pepper and Spanish smoked paprika.
  6. Now for the fun part! Arrange 3 bowls side by side, one with plain flour, one with the eggs (slightly mixed) and one with the breadcrumbs (now if you want to customize this you can mix the breadcrumbs with crashed nuts, or cereals)
  7. You need to start with the flour and make sure you cover the chicken thoroughly, you then dip it in the egg mix and finally in the breadcrumbs. You then place them on a large tray that is gently greased with vegetable oil.
  8. You will get messy fingers, but this is the fun part :). Now place the tray in a preheated oven 200 Celsius for 20-25 minutes until they turn golden brown. If you want to be sure they are properly cooked, just pick the thickest piece and cut it in half and check.
  9. Now you are ready to enjoy… I served mine with a Greek salad (which I will show another time)

On the day of the event, i will arrive at your home and will do all the appropriate preparations for the meal. Depending on the menu i might need to be there a few hours earlier.

During the meal i will serve the dishes or prepare the buffet. Once the meal is complete, i will clear the dishes, clean the kitchen and then leave. Discreetly.
